Named after the Entrada Sandstone Formation, the name also means “beginning.” And when beginning your dining journey at Entrada, might we make some recommendations?

• The bison Carpaccio dressed in olive oil, fresh lemon with caper berries and delicately shaved red onion, is a light but powerful way to start your meal.
• Follow this by our Palisade port-poached pear with goat cheese, cherries, toasted walnuts and baby lettuces.
• For your entrée, perhaps the polenta-dusted Colorado striped bass with quinoa and amaranth pilaf, baby spinach and diced tomatoes, or the oven-roasted Colorado rack of lamb lightly scented with toasted fennel and served with asparagus and pancetta creamed orzo.
